New Hotel Openings in Germany in Spring 2025

The year is still young, after all, it’s only April. Nevertheless, there have already been several new hotel openings in Germany in 2025. We would like to introduce you to some of the most worthwhile accommodations here.

Radisson Collection Berlin

Where is it?

Right in the city center, opposite Museum Island on the Spree River.

How many rooms?

What about the interior?

After a two-year renovation phase, the interior of the Radisson Collection Berlin is now looking spick and span. The use of light wood and gray tones makes the rooms appear even more light-filled than they already are. And works of art and decorative objects add small accents that are pleasing to the eye.

The public areas, on the other hand, impress with their modern lines and a touch of 1920s flair – we are still in Berlin, after all. The architectural highlight, however, is the 24-meter-high vertical garden that dominates the interior of the hotel and around which the hotel tower rises. Almost 2,000 plants find space on the imposing cylinder. This also means that guests are spoiled for choice. Would you prefer a room facing outwards, with the best view of the city and the cathedral, or a room facing inwards, with air freshly filtered by plants and an architectural marvel before your eyes? It’s virtually impossible to make the wrong decision.

Food and drinks?

The hotel restaurant San Éna serves the finest Greek cuisine. A large selection of hot and cold mezze, from fried halloumi to tuna tartare, provides the ideal basis for the exquisite delicacies from the grill: How about black tiger shrimp or caramelized octopus in chili garlic butter? If you’re not in the mood for seafood, the menu also features good old rib eye or a hearty soutzoukakia.

The restaurant’s warm gray and brown tones invite you to linger after your meal and enjoy the atmosphere. Speaking of atmosphere, it’s also first-class at the bar in the atrium. Whether guests enjoy their drink in one of the cozy club chairs or directly at the counter set into the base of the vertical garden, a memorable evening is guaranteed.

What to do?

What isn’t there to do? Berlin is not exactly lacking in activities, quite the contrary. The Museum Island alone, years of renovation or not, is worth planning several days to visit. The TV tower and the Red Town Hall are also within walking distance. And apart from that, there is everything you could possibly want to do in Berlin. The possibilities are endless.

Kimpton Main Frankfurt

Where is it?

In downtown Frankfurt, close to the Roßmarkt.

What about the interior?

The interior design is a delight for design fans. And for everyone else, too, really. The team from London-based architecture firm Waldo Works drew heavily on the Bauhaus legacy and the “New Frankfurt” urban development plan, which shaped the city back in 1925. Accordingly, the design in the Kimpton Main Frankfurt focuses on geometric shapes, clean lines, large areas of color, and a certain functionality that is anything but boring.

The rooms actually look as if they could be exhibited in a design museum: white walls against which furniture, décor, and even bedspreads stand out strikingly. In the lobby and restaurant, on the other hand, there is a lot of granite paired with shades of green and brown. Cool, yet inviting. Oh, and with art hanging everywhere, the hotel is almost a museum in itself. There’s a lot to see here!

Food and drinks?

In the hotel itself! The Brasserie Anni serves excellent hot food until late in the evening to satisfy guests’ appetites. The menu is based on French cuisine (from onion soup to moules frites to coq au vin), but a Wiener schnitzel has also made it onto the menu.

For refreshment before or after, simply head over to the elegant Bar May: the slatted counter with its minimalist leather stools is not only the perfect backdrop for stylish portrait photos, but also the ideal surface for the irresistible drinks conjured up by the bar team.

What to do?

During the day, a tour of Frankfurt’s old town is a must. You can trace German history in the Paulskirche, and the newly designed Römer is definitely worth a photo. If you’re in the mood for more culture, you can either enjoy one of the concerts in the nearby Alte Oper or head to the Museumsufer on the other side of the Main. Oh, and Frankfurt is of course a great place for shopping, especially on the Zeil.

Holiday Inn Express Dresden

Where is it?

Halfway between the main station and the old town.

What about the interior?

Bright, tidy, cozy: the Holiday Inn Express is the ideal place to stay for a proper city break in Dresden. If you get a room in the right spot, you might even get a view of the Frauenkirche. But even if you don’t, it’s still worth staying here. The decor is simple but not spartan. The semi-open bathroom makes the rooms feel pleasantly spacious, and you don’t have to shower in the dark. The public areas impress with a mixture of cozy, dimly lit lounge and comfortable living room atmosphere.

Food and drinks?

The hotel itself “only” serves breakfast, but with the picturesque old town just a few minutes away, no one will go hungry. Whether you’re in the mood for hearty home cooking in one of the historic inns, Spanish tapas, or an Italian ristorante, there’s something for everyone here. Our tip: Attend a Seven Paintings Dinner, where seven famous works of art are reimagined as a dinner! We experienced this in Wuppertal and were absolutely thrilled.

What to do?

Spend the whole day strolling through the old town. Sit by the Elbe. Visit the Royal Palace. Admire the Frauenkirche or simply marvel at the great art in the Dresden Zwinger. It’s hard to get bored in the “Florence of the Elbe”. There’s just too much to do.

Brunfels Hotel | Mainz

On the edge of Mainz’s beautiful old town.

What about the interior?

The interior of the Brunfels is a real design dream. Especially for plant lovers. The public areas of this Art Deco hotel are adorned with beautiful green plants in every nook and cranny. But it’s not just the greenery that makes the Brunfels a real eye-catcher. The design team has done a great job; you’ll want to take every single piece of furniture home with you – even though they work best together.

Whether it’s the bar with its elegantly tiled columns and coffered ceiling or the numerous small pictures depicting scientific plant illustrations, there’s never a dull moment for the eyes at the Brunfels. The rooms are a little more subdued in terms of visuals, but never boring. Shades of gray, brown, and green give guests plenty of visual relaxation while forming the perfect backdrop for small design details. Abundant light from the large windows makes it the perfect retreat.

Food and drinks?

The best place is in the hotel itself: the Brunfels restaurant, run by Kevin Petersen, offers a small but very finely selected dinner menu. “Main” dishes include baked halibut with potato and cucumber salad, trout caviar, and dill oil. Or, if you prefer meat, the Brunfels burger in a sourdough brioche bun with Appenzeller guanciale from Lazio and pickled cucumbers. Familiar dishes, elegantly reimagined. Of course, there is also a selection of oysters and caviar.

Gin lovers will be particularly delighted by the bar, as Brunfels has 30 different types of German craft gin on offer. If you want to try them all, you’d better do so over several visits, for the sake of your liver. And, since we are still in Mainz, the wine selection is also impressive.

What to do?

Mainz was founded by the Romans and is one of the oldest cities in Germany, so there is plenty to do and see. From the Brunfels, it is only a few minutes to Mainz Cathedral, a true Romanesque masterpiece. Three times a week, the square in front of it is lined with market stalls, which are perfect for strolling along. A trip to the Rhine is a must on any visit to Mainz, and the Rhine promenade with its numerous places to sit and lie down is perfect for this. On rainy days, we recommend a visit to the State Museum.

Mannheimer Hof

Where is it?

In a prime central location, right next to the water tower.

What about the interior?

Classy, classy, classy: following a redesign, the Mannheimer Hof, now part of the Leonardo Limited Edition, presents itself in velvety green and blue with gold accents. It’s a combination that even we find irresistible. In addition to the color scheme, the furniture and décor also evoke associations with the “Golden Twenties.” But don’t worry: the bright rooms are not lacking in modern amenities. Nevertheless, the style continues here, only a little more restrained. But small details such as Art Deco-inspired lamps and ornate pictures create a cozy feeling of home. Every decorative object is a thought that has gone into the design of the hotel.

Food and drinks?

The hotel restaurant “Twist,” which is also worth a visit, serves French dishes with Asian influences. The Joy Bar—a nod to Mannheim’s original Joy Flemming—provides the perfect liquid accompaniment. But the “city of squares” has plenty more to offer in terms of cuisine. Dobler’s, which has been awarded one star in the current Michelin Guide, is within walking distance. And if you’re in the mood for a hearty snack, head for the Ring. Pita Pita, for example, serves really delicious gyros.

What to do?

As already mentioned, Mannheim is a city of squares. And if you’re not used to such a grid-like street layout, then strolling through the city center can be an experience in itself. Otherwise, the Mannheim Rosengarten is practically on your doorstep, where concerts and musicals are performed on a regular basis. The extensive Luisenpark is also not far away, and a detour to Mannheim Palace, one of the largest baroque palaces in the world and now the heart of Mannheim University, is also a must. For culture vultures, a visit to the Reiß-Engelhorn Museums with their changing but always worthwhile special exhibitions is recommended. And for your nightlife fix, head to Jungbusch.
